like any dressing, ya need
1) oil
2) sweet
3) sour
4) flavor
Start with the spice, I prefer fresh herbs mortar’d and pestled with a little oil– like rosemary, thyme oregano– but you can use any combination. add minced garlic or ginger if you’re into that. Pound it up. Transfer that to a bowl and add fresh lime juice for tang. Then add agave nectar or honey. Then Olive Oil– and I prefer fresh OJ to top it all off. But you can use Fresh tomato juice and blend everything together which is also nice. Lots of ways to go, just balance it out. Salt and apple cider vinegar helps too if you like that.

1/2 cup plain yogurt (silken tofu for vegans) clove minced garlic (red onion for vampires) 1/2 cup chopped tomato from garden (from supermarket tomato on the vine okay for agriculturally-impaired) juice from 1/2 orange, 1/4 cup rice vinegar(balsamic for the wine-snobs) 1/4 cup sesame oil (canola for the working poor) dash of freshly ground peppercorns and sea salt. Honey to taste (Splenda for those with a death-wish) To health and humor dude….enjoy!
