A Great Collection of Vegan Recipes and More
Does anyone have good vegetarian or vegan recipes they would like to share?
Question:
I’ve never tried asking on Y!A for a recipe and figured it couldn’t hurt. Me and my husband love spicy foods and we keep veggie crumbles (meal starter) around. We love all veggies so really anything goes. Thanks in advance

YES! Go to my blog, http://www.ecofriendlynyc.wordpress.com, and check out my recipes! there aren’t a lot, but they sure are good! Faves: breakfast: blueberry pancakes; lunch: “chicken” salad; dinner: sweet and sour tofu.

my favorite is vegetarian fajitas!
-1 green peppers
-1 red peppers
-fresh cilantro
-2 tomatoes
-1 red onion
-1 jalapeno pepper
Chop them all up and cook them in a pan with whichever oil you prefer (i use olive) until they look cooked then place on the table while sizzling.
I serve them with whole grain tortillas, rice, re-fried beans, and homemade salsa and guacamole

I like to make spicy tofu and edamame, aubergine and spinach curry and good ol’ chilli. I’ve also just made a potato and chickpea bake, which isn’t spicy but is very tasty and keeps really well in the fridge for about five days if needed!

I use frozen edamame beans, and serve it over basmati rice – yummy!

I have a couple really great recipes, but keep in mind that I add whatever i have on hand, and I don’t really use exact measurements in my cooking
1) Ma Po Tofu
ingredients:
-about one package of tofu ( like to use half silken and half regular, but whatever you prefer)
-one stalk of spring onion (sliced into matchsticks)
- one handful of bean sprouts
for the sauce:
-one tablespoon of black bean paste
-one tablespoon of oyster sauce
-one teaspoon of honey
-about one quarter cup of soy sauce
-red pepper flakes or cayenne pepper (adjust to your taste buds)
directions:
-whisk together the sauce ingredients. add some water if too thick (the consistency should be relatively thin)
-slice tofu into one inch by one inch squares
-marinate the tofu in a ziploc bag with the sauce for about half an hour*
-heat a bit of (veggie) oil in a large pan or wok at medium/medium-high
drop in the spring onions and stir fry until a more vibrant green (about a minute)
-drop in the tofu, bean sprouts, and sauce (if not already mixed with tofu)
-stir and continue to add spices of your choice until bubbling
-place the cover on your pan/wok and let it cook for about another five minutes
-serve as is, or with sesame seeds on top.

2) pasta stir fry
ingredients:
bell pepper
spring onions
mushrooms
carrots
celery
garlic
any other vegetable that tickles your fancy
short length pasta (such as macaroni, penne, shells, etc)
seasonings according to your tastebuds
directions:
-boil the desired amount of pasta according to directions on the box
-dice all ingredients into small pieces (all the veggies can be mixed together except the garlic)
-heat oil in a pan on medium/medium-high heat
-drop in chopped garlic and stir fry until tannish/slightly brown
-add the drained pasta and more oil/butter
-cook until the garlic flavor is incorporated into the pasta (this is a good way to season the pasta itself)
-remove pasta and garlic from the pan
-stir fry the veggies and add spices and sauces as desired (soy sauce, worschire sauce, goya seasoning, etc)
-add the pasta back into the pan when the veggies are fully cooked and let the sauces combine.
-serve as is, or with sesame seeds and lemon juice sprinkled on top.
