Question:
My husband will be admitted to the hospital for epilepsy testing next week. We try to eat healthy and as much raw as possible. During his stay, I am required to stay with him because I have witnessed pass seizures and they want me to identify the milder version.
ANYWAY- all of that to say, I will be up at the hospital for about a week. I have access to a fridge, so i can keep my food cold. Are there so easy raw recipes or salads I can make during our stay so we can avoid hospital food? I will not be able to take a lot of kitchen tools for preparation, so the more primitive, the better (but still tasty). For example, one salad I love is an iceburg wedge, topped with bleu cheese, diced red tomatoes, a little crumbled bacon and lots of black pepper and a dash of lemon juice. We’re not vegan, but we try to eat 75% fruits/veggies.
