Breakfast is the most important meal of the day. Unfortunately so many of the traditional breakfast foods are not Vegan. Luckily there are some very creative recipes to help you out. Here is a favorite one in my household.

INGREDIENTS
1 1/2 cups all-purpose flour
1 cup white sugar
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
1 cup water
DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9×5 inch loaf pan.
2. Sift together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.
3. Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.
You can replace some ingredients with other things, such as vanilla instead of cocoa. This is known to make a very tasty cake.
Use a good vegan cake recipe. I suggest picking up a copy of “Vegan Cupcakes Take Over the World” by Isa Chandra Moskowitz and Terry Hope Romero. Not only can you make her some awesome cupcakes from it (or even adapt a cupcake recipe to a regular cake,) but you can give her the book as a birthday gift too. There are delicious frosting recipes in there, too. I like the Mexican Hot Chocolate cupcakes the best so far.

An amazing Carrot Cake:
Ingredients (use vegan versions):
2-1/4 cups all purpose flour
2 teaspoon baking soda
2 teaspoon cinnamon
1 teaspoon pumpkin pie spice or allspice
1 teaspoon baking powder
1 teaspoon salt
3/4 cup light brown cane sugar
3/4 cup cane sugar
3 egg equivalent in Ener-G egg substitute
1 teaspoon vanilla
1 cup vegetable oil
2 cups finely grated carrots
1 can (about 14 oz) crushe’d pineapple, drained
1 cup shredded coconut
nuts and raisins optional
Directions:
Preheat oven to 350°. In a medium bowl, mix flour, baking soda, cinnamon, spice, baking powder, and salt. In a large bowl, mix sugar and eggs until creamy (works best with an electric mixer) – add vanilla, then add vegetable oil. Mix wet and dry ingredients together and add carrots, pineapple, and coconut.
I prefer a thicker cake, so I used a 9×9 glass pan. But if you prefer thinner cake with more servings, use a 13×9. Grease pan. Smooth batter into pan. Bake for 40 – 45 minutes or until toothpick comes out clean. Be sure to let the cake adequately cool before frosting.
Faux Cream Cheese Frosting recipe:
1 package vegan cream cheese 1/3 cup vegan soy margarine (like Earth Balance), softened. 1 tsp. vanilla and 2 cups vegan confectioners sugar
With an electric mixer, beat cream cheese and margarine. Add vanilla, then add sugar.
This entire recipe tastes just like the real thing! It just made it last night and it is so delicious!

Chocolate Cake
Ingredients (use vegan versions):
1 cup sugar
1 1/2 cups flour
1 teaspoon baking soda
1/3 cup cocoa
1/2 cup oil
1 cup cold water
2 teaspoons vanilla
1/2 teaspoon salt
2 tablespoons vinegar
Directions:
This recipe comes from my mother’s friend, and I didn’t even have to veganize it! Its probably THE most moist cake I’ve ever had.
Mix first eight (all but vinegar) ingredients well.
Add the 2 tablespoons vinegar and mix quickly until mixed well.
Bake for 25 minutes at 375 degrees Fahrenheit.
Serves: 6-12, Preparation time: 30 minutes

Yellow Cake:
Ingredients (use vegan versions):
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 cup raw sugar
1/4 cup water
1/2 cup soy milk
1 tablespoon apple cider vinegar or seasoned rice vinegar
2 teaspoons vanilla extract
1/4 teaspoon almond extract
3 tablespoons canola oil
Directions:
Preheat oven to 350.
In a large bowl, mix together dry ingredients together.
In another bowl, mix all wet except oil and stir well.
Mix together wet and dry together.
Add canola oil, 1 tablespoon at a time and mix well.
Bake for 22-25 minutes until lightly golden.
Note: you can sub applesauce for the oil if you’d like to make this a healthier recipe. Just make sure to reduce the sugar just a touch if you used sweetened applesauce
