Question:
i do a lot of cooking, and half the time i start out having no clue what i’m making. it just comes to me.
everything is vegan, but don’t let that scare you away from offering ideas; i have substitutions for everything. i know that lots of bisques get their thickness from pureeing rice…that was how i began.
the rice was pureed and mixed with vegan chicken broth. i then pureed a baked butternut squash, and “watered” it down with soy milk and combined the two mixtures. it is way too thick to be a soup..and there’s way too much of the mixture for just one dish.
i was thinking of turning some of it into a casserole – but what can i add that goes well with such a sweet squash? how are squash dishes usually seasoned and what vegetables go good with them? what do you think i should do? any thoughts are appreciated.
