This is an amazingly simple yet incredibly delicious low fat vegan recipe you can enjoy. Feel free to substitutes the ingredients such at the type of bread. You can even add more or less vegetables to taste.

Leek spinach quicheSpinach and Feta Quiche

Servings: 1-2

1 12-inch Arabic round flat loaf
250 g Mori Nu lite Tofu
250 g frozen (or fresh) spinach
150 g leek
100 g fresh mushrooms
salt
pepper
paprika powder
lemon juice (fresh or concentrate)

Instructions

Preheat oven to 450F and pre-bake the loaf for about 4-5 minutes on a baking sheet. Thaw spinach and drain thoroughly. Wash mushrooms and cut them. Cut leek into small pieces, rinse and drain them. Get a pan and use a fat free non-stick cooking spray (or just a bit water) to saute leek pieces until they are soft and lightly brown. Remove from heat and put leek in a mixing bowl, add tofu, and spinach and puree. Saute mushrooms and add to the mixture. Add pepper, salt, paprika powder and lemon juice to taste and put this mixture over the loaf. (It is supposed to look like a spinach pizza). Bake it for about 20-30 minutes. Enjoy!

I’m absolutely obsessed with Curry, but I know a lot of vegans don’t know how to move away from the butter and dairy that they may remember. You can also add potatoes for extra flavor.

Here’s a delicious meal for one that is amazing. You can easily scale it up to feed multiple hungry mouths.

Cauliflower and Pea Curry

4 – 6 oz cauliflower chopped into floretVegan Cauliflower and Pea Currys
1 small onion, chopped
1 clove garlic, crushed
1/4 – 1/2 tsp ginger, minced
1/2 tsp ground coriander
1/2 tsp ground cumin
1/4 tsp garam masala
1/4 tsp chili powder (or more to taste)
1 Tbsp tomato paste
4 Tbsp water
1/3 cup frozen peas
1 Tbsp soy milk, optional
cooked brown rice

1. Cook cauliflower florets in a little boiling water for about 5
minutes. Drain.

2. Heat saute liquid of choice in a saucepan and add the onion. Cook
briefly until beginning to change color. Add garlic and ginger to
saucepan and stir well. Cook for another minute or so.

3. Stir in the spices and cook for about 30 seconds longer. Then add
the tomato paste and water, plus a little salt if required. Bring to a
boil, then stir in the cauliflower and peas. Lower heat, cover pan, and
cook for about 5 minutes, until the vegetables are tender. Stir in the
soy milk and serve over brown rice, accompanied by mango chutney and a
papadum if desired.

This delicious recipe has been a favorite of mine for quite some time now. Mexican food is near and dear to many vegans hearts. This dishes really captures that spirit in a delicious way. You can also top it with your favorite vegan cheese of course :) Enjoy!

Vegan Black Bean and Bell Pepper Burritos

IngredientsVegan Bean Burrito
1 can black beans
3 bell peppers (different colors are best: red, yellow,
orange, green, etc), chopped
1 tsp (or to taste) dried garlic, or chopped garlic
cloves
Tortillas
Salsa

Drain the can of black beans, reserving 1/4 cup of liquid to create a
“sauce” if you like saucy burritos. Combine beans, peppers, garlic,
and salsa, throw mixture into a tortilla, and nuke for 30sec to 1min.
This is my favorite stripped down version of a bean burrito, is
incredibly quick to make, and real pretty to boot. The bell peppers
can be roasted for a richer flavor (over a low, open gas flame or on a
cookie sheet under an oven broiler until outer skin is black; immerse
in cold water & peel off outer skin–WATCH OUT for the innards as they drain–they’re HOT!)

Question:
I’m trying to find a vegan multivitamin, and the bottles only list when the ingredients are vegetarian, but vegetarian doesn’t tell me whether or not there are non-vegan ingredients in there. I’d much prefer if someone knew of one that didn’t need to be ordered online and might be able to be found in a supermarket, pharmacy, or health food store. I really need to find one, soon, though, so any help would be great. Thanks!

Question:
I also want to avoid animal products in personal care items. Soap, shaving gel, shampoo, etc. Are any “normal” brands vegan, or do I have to go to Whole Foods and get the all-natural stuff that costs five times as much? (I’m poor) I’m sure there’s other stuff I never would have thought of that’s not vegan, like photographic film or gel-cap medicine. I’d rather not be constrained to the health food stores due to cost, but is there anything out there that’s not based on animal products?

I understand this is a rather exhaustive question, but if anybody has any resources – books or web sites – that are reliable and a good list of vegan and not vegan non-food items, please let me know. Thanks.
