Filling
1 18-ounce jar creamy peanut butter (2 cups)
2 8-ounce packages cream cheese, room temperature
2 cups powdered sugar
2 tablespoons vanilla extract
2 cups chilled whipping cream
Topping
1/2 cup whipping cream
1/4 cup sugar
1 tablespoon instant espresso powder
6 ounces bittersweet (not unsweetened) or semisweet chocolate, coarsely chopped
1 teaspoon vanilla extract

1/3 Cup Earth Balance Margarine
1/4 Cup All Purpose Flour
2 1/2 Tbs Low Sodium Tamari or Soy Sauce
1 Tbs Lemon Juice, fresh
1 Tbs Sweet/White/Mellow Miso
1 Tbs Tahini
1 Tbs Tomato Paste (not sauce!)
1 1/4 Cup Soy Milk
1/3 Cup Nutritional Yeast
1 Pinch Salt
Black Pepper, to taste
I don’t have tahini or tomato paste. I was thinking peanut butter for the tahini and double the amount of tomato sauce?

I love to cook, and I’m tired of looking online and only finding mediocre recipes
does anybody have anything really good that goes beyond the typical nutritional yeast mac and “cheese”?
(oh and something that’s not too expensive would be good; I know I said gourmet but my mother doesn’t exactly love the idea that I’m vegan and she puts me on a budget that gets increasingly smaller and smaller every week just based on her own frustration…)

Particulary for a young toddler. I am having a hard time cooking Vegan because I am not use to it.
