I have tried regular vegetarianism and just cutting out meat made my blood sugar drop dramatically. It was at 220-300. It dropped to 200 or below. It turns out that meat causes insulin resistance… Now, I need to go low carb too to get it lower. Anyone know any good recipes?

For almost a week now I have been searching for easy vegan/vegetarian recipes, but almost all that I have found call for using fake meats or soy based products. I don’t like fake meat or soy.
Does anyone have any simple healthy recipes.
I’m looking for ones that are easy because I also cook animal based meals for the rest of my family.

My whole family has turned vegan because heart disease runs on my husbands side of the family. We were meat eaters for 40 years but in the last year we decided that cutting out meat would be healthier since my husband is only 40 years old and has already had a stint put in his heart. If anyone has unique vegan recipes other than just plain steamed vegetables let me know..thanks!
