Question:
I would like to replace some of the meat in my diet with vegetables. I lift weights and do cardio so protein is very important. Basically I don’t want to just eat a plain cup of lentils for each meat substitution and don’t know anything about seasoning lentils or really what other substitutions could be made or how to prepare those other substitutions.

My boyfriend and I aren’t vegetarian, but I’m trying to incorporate more vegetarian meal options into our daily life. I feel we’d be healthier if we ate a more organic and vegetarian-ish diet. He is not a fan of tofu by any means, so that’s out. But I don’t think he has any objections to other alternatives.
Does anyone out there have any favorite recipes they’d like to share? We love Chinese, Italian and Mexican foods, if that matters. Thanks!!
I like the first responder’s suggestion, though I’m not sure how he’d react to the eggplant. I may try that one day just to see how he feels about it.

My mom has never cooked fish before, and we need a good recipe for we starters, cuz basically my whole family absolutely hates sea food )unless it tastes like chicken; and my parents like shrimp… from restaurants). And my mom is not the picky eater type. She is willing to eat anything… except sea food. SO any suggestions? a website with overly exaggerated details would be nice ^_^ Thanx! and no medium rare (or raw) please.
