Thai food has such a unique blend of flavors. I make this and variations of it at least once a week. It’s a lot easier than you may think and is of course completely vegan. Let me know what you think.

hmmm it depends on what you like. however, i am tempted to say:
pita bread chips with hummus or guacamole
fruit salad
couscous with sun-dried tomato & basil
mixed nuts
Good luck pleasing your vegan friend. Check the labels for dairy, eggs, ambiguous “natural flavors”. Fruit is a good bet. You would be surprised how many foods there are that you never thought had animal products. The vegans can find an animal product in almost anything tasty.
