doubtful whole foods uses a pre-made vegan chicken.
i have seen some amazing recipes with extra-firm tofu, frozen and thawed, which gives it a little more meaty texture, and then sliced up and batter-fried… it could then be drenched in general tso’s sauce.
if you don’t want that, there are premade vegan nuggets, and vegan chicken breasts made from a few companies that you could slice up and fry. Best, i don’t know, since i don’t mess with the premade meat substitutes, but have worked with tofu a fair amount.
